Chiu Chow cuisine is one of the subcuisines of Cantonese cooking that has become quite popular recently in Hong Kong. It is a peasant cuisine that emphasizes strong, earthy tastes. Like Cantonese cooking, it pays great attention to the textures of the ingredients in all dishes and its recipes ensure that each ingredient retains its natural flavour. Nowhere are these traits more evident than in these wonderful dumplings which I had for the first time in a Chiu Chow restaurant in Hong Kong. T
