Shanghainese in Hong Kong boast that the place was a sleepy backwater until they arrived in 1949, after the People’s Republic was established on the mainland. There is some truth to this claim inasmuch as the Shanghainese did indeed bring with them their great commercial and manufacturing skills. They also brought their venerable culinary traditions. Shanghai-style restaurants quickly established those traditions in Hong Kong. Today, you can see such restaurants everywhere, their distinctiv
