One finds this simple, clear chicken broth, slightly reduced to concentrate its flavour, in good restaurants throughout Hong Kong. It serves as a refreshing finish to a banquet when paired with Crisp Half-Moon Dumplings or it can simply be consumed by itself with chopped yellow chives. It is very much like a European consommé. The Chinese yellow chives have been grown in the dark and have a rich, earthy, slightly garlicky taste; and of course, the lac
