Lau Fau Shan is a remarkable fishing village in the New Territories outside Hong Kong. It is located on the edge of Deep Bay, off the South China Sea, and the coast of China can be seen easily from its shores. One narrow street in the village, called Ching Alley, leads to a fish market near the pier where the fishing boats dock. This market is famous for oysters – specifically the Crassostrea gigas type, which are elongated in shape and very large. These oysters are
