On any visit to Hong Kong among the great dining treats are the prawn dishes that are available there. Freshness is guaranteed, with the prawns still swimming about in tanks as you order. And anything that fresh deserves to be cooked in the most simple way possible, with a minimum amount of seasoning – just enough to enhance the virtues of the prawns. Rarely have I found prawns as enjoyable anywhere as I consistently do in Hong Kong.
