This easy-to-make prawn dish is typical of tasty dishes you find in many restaurants in Hong Kong. The cashew nuts add an interesting textural counterpoint to the prawns. This is fast food of great quality.

Ingredients

  • 2 dessertspoons salt
  • 1 pound (450 g) large prawns, peeled and deve

Method

To clean the prawns follow the directions.

Combine the prawns with the coating ingredients in a medium-sized bowl. Mix well and refrigerate for about 20 minutes.

Heat a wok or large frying pan until it is hot and add the groundnut (peanut) oil. When the oil is just warm, quickly add the prawns, stir to separate, and turn off the heat. Allo
