Along with Chiu Chow, Hakka cuisine is among the least-known branches of Chinese food. The Hakka women are seen throughout the New Territories wearing broad-brimmed, black-fringed hats as they tend the fields. They are historically nomadic and therefore many of their specialities include preserved vegetables. Especially well-known is their Salt-Baked Chicken, and this squab dish is a variation on that delicious peasant dish.
