The Chinese have a lute or mandolin called the pipa, and there is in China a yellow loquat that, because of a similarity in shape to this musical instrument, is also called the pipa. The reference here is to a butterflied duck or chicken, opened to resemble the pipa. One can usually find this type of dish in a restaurant or delicatessen in Hong Kong, where there are large commercial roasting ovens. It can be easily duplicated at home in the West.
