Chicken livers may be found wherever chickens can be had, that is, almost everywhere in the world. Though all chicken livers are equal, some are more equal than others: Hong Kong chicken livers are, it seems to me, richer, plumper, lighter and smoother than others, reminiscent, really, of French duck and goose livers; Hong Kong chickens must be well fed.
