Some things don’t change. Here we have a traditional dish that resists modification. The ‘yellow chives’ are simply Chinese green chives grown in the dark. They have a mildly pungent, earthy flavour reminiscent of onions and garlic that goes particularly well with pork. Because they add a pleasantly distinct taste to simple foods, they are much prized by chefs. Paired with mushrooms, as in this recipe, they help to create an unusual treat.
