Stir-fried seafood with spiced salt and pepper is very popular in Hong Kong. What’s new is that Hong Kong chefs are applying the technique and the seasonings to foods such as spare-ribs, as here. The result is a dish of new and richer dimensions. The three-step cooking process should not put you off. The first simmering tenderizes the meat and can be done hours in advance.
