It is a little surprising to me that there are very few vegetarian restaurants in Hong Kong. However, vegetarian cuisines are often found in the New Territories at Buddhist or Taoist temples. In my many visits there, I sampled a vegetarian casserole, and this is my interpretation of that wonderful dish. The vegetables are savoury and have contrasting tastes and textures — for me, a key element in the success of a vegetarian dish.
