Fried Rice with Pineapple

Fried rice is often served at meals that include many dishes. Generally, it is meant as an extra dish, to be sure that even the hungriest guest is satisfied. But fried rice lends itself to many variations. This is a popular and unusual rice dish in Hong Kong that I suspect is of Thai origin.
