Another noodle favourite in Hong Kong is thin rice noodles, which are lighter than wheat noodles and lend themselves to dishes that are subtle, delicate yet full of flavour. Singapore-style rice noodles are just such a treat. Whenever I visit Hong Kong, I love to sample them whether at a food stall in the streets or in any of a number of ‘quick-noodle fast-food restaurants.
