Westerners are at first surprised to see soup served as a dessert, but they soon discover that it works very well. Walnut soup has made its way onto the menus of some of Hong Kong’s best restaurants. Although my favourite is almond soup, I never turn down this version either. It is a deliciously different way to close a nice dinner.
Blanch the walnuts for 5 minutes in a small pan of boiling water. Drain and rinse well in warm water. Allow them to dry.
