Puddings made with gelatine are a popular offering in many homes and restaurants in Hong Kong. The light texture is a soothing finish to meals in which strong flavours such as garlic, shrimp paste, oyster sauce or black beans are used to and enhance meats or vegetables. Here, an almond inspiration is combined with fresh oranges to make a typical light dessert. You can easily use other seasonal fruits, such as raspberries, strawberries or fresh peaches.
