In a large pitcher, muddle 40 mint leaves and the simple syrup. Add the grapefruit juice and stir to combine. Chill in the refrigerator until ready to serve.
To serve, divide the mixture evenly among 8 to 10 lowball glasses filled with ice. Top each glass with club soda and garnish with the remaining mint leaves.
