Stuffed vegetables of all shapes and sizes are authentic to Levantine cuisine, usually made with rice and spice. Stuffing vegetables and leaves were synonymous with battle and hunger, when any morsel of food found could be stuffed inside a rotting vegetable and eaten for sustenance. This recipe for stuffed peppers is with freekeh, a change from the usual rice stuffing and packed with sunny Mediterranean flavours. A delicious, easy, vegetarian supper with a crisp, green salad.
