Light and buttery, these little biscuits have a hit of citrus zing and a nuttiness from the khorasan flour and pistachios. Like so many Middle Eastern sweetmeats, a syrup is lavished on each biscuit immediately they come out of the oven, to enhance the delicious flavours. Rose water or orange blossom water can be added to the sugar syrup to give a floral note to the biscuits.
