  • a good pinch of saffron threads
  • 2 egg yolks
  • 1 tbsp Fre


To create your essence of saffron, put the saffron and 2 tablespoons water in a small saucepan over a low heat. Simmer for 4–5 minutes to allow the saffron to release its flavour and colour. When it is a strong deep-orange colour, strain the liquid into a bowl and, using a whisk, beat the egg yolks
