What used to amaze me about the apples my grandparents grew and stored on the farm was that, even if the skin was as wrinkled as Grand-père’s face, the inside stayed fresh and beautiful – just like him, he used to say! Even after months of storage, the taste was tremendous. So with these apples, my Grand-Mère taught Maman to bake. With these apples, Maman taught me to bake. Whenever I tell my son, Antoine, we are going to visit his Grand-Mère in France, the first question he asks is, ‘Can you ask her to bake an apple tart, please, Papa?’
