The most intriguing element of this dish is the tomato sorbet, a great example of reducing and concentrating the flavor of an ingredient so that it becomes more intense than the original. It’s very refreshing, especially paired with a variety of cherry tomatoes (use as many different kinds as possible and the best available, preferably ones that are vine-ripened) set on a brioche crouton and garnished with a light, crisp garlic tuile. The garlic tuiles are best the day they are baked. They
