AGOUJON is a small, 2- to 3 -inch minnow like fish that is caught in the rivers of France. Goujons are usually deep fried and served as an hors d’oeuvre with lemon and fried parsley. These crunchy, tender fish are eaten head and all, for their bones are hardly noticeable. Some restaurants in towns bordering rivers will serve them while you sip an aperitif and contemplate the menu.
