ALTHOUGH THESE DELICIOUS, lightly caramelized pastries are called cookies, they really belong in a class by themselves. Sometimes called “elephant ears” in English, palmiers (which means “palm trees”) are a perfect way to use up any scraps of puff pastry you may have—although once you’ve tasted a palmier, you’re likely to make fresh puff pastry so you can bake a larger batch.
