A BAVARIAN CREAM (bavarois) is a molded dessert made from a crème anglaise base to which gelatin and whipped cream are added. A marquise Alice is a praline-flavored Bavarian cream with kirsch-moistened ladyfingers buried in the center. The unmolded cream is traditionally covered with whipped cream and decorated with currant jelly.
