TOMATO-FLAVORED velouté can be made with either chicken or fish stock, depending on what you intend to serve it with. A classic sauce aurore recipe calls for tomato purée, whereas this recipe uses a more concentrated tomato paste. This reduces the cooking time necessary to achieve the desired consistency of the sauce.
