SAUCE VERTE is a green mayonnaise served with cold poached fish and seafood. The sauce is made with a variety of greens and herbs that are first briefly blanched and refreshed to heighten their color, then squeezed dry and chopped along with the mayonnaise ingredients in a blender or food processor.
