PRALINE PASTE, found in supermarkets in France, is used for making candies or flavoring ice cream, pastry creams, and Bavarian creams. It is a characteristically French flavor, and many Americans do not appreciate it at first. Given time, however, I have never met anyone who has not learned to like it in one form or another.

Finding blanched hazelnuts in the market is easy in France, but not as easy in the United States. They are, however, available online and in many specialty food markets.
