In place of the raspberries, use pounds fresh apricots, halved (or quartered if large) and pitted to yield 2 pounds. In step 1, add ½ cup water along with the fruit and sugar. Apricots are not as juicy as berries, so water is needed to dissolve the sugar and to prevent it from caramelizing or burning.
