These ‘merveilles’ (sweet fritters) are flavoured with the most famous Charentais product, cognac.

200 g flour

Method

Prepare the dough as for sweet pie pastry*, adding the baking powder, orange flower water, cognac and water to the well. If the dough is very soft and sticky, roll it in a little flour. Wrap and chill for at least 2 hours or until firm.
