There is no standard recipe for poule au pot. In the country, the chicken is often cooked simply with vegetables, leaving out the meat. Some of the broth may be used to cook rice as an accompaniment, or the broth may be thickened as a sauce, with olives and baby onions added as a garnish for the chicken.
