Omit the chicken and stuffing from the above recipe, and add to the pot with the shank:

(wrapped in cheesecloth so that the marrow does not fall out during cooking). Add the vegetables 30 minutes after the marrow bones.
When serving the broth, if you prefer, scoop the beef marrow out of the bones and spread it on the browned bread. Put a few slices in each soup bowl and pour the broth over them. Alternatively, add the marrow bones to the meat platter and use spoons to scoo
