There are many theories as to the origin of brioche. The inhabitants of St Brieuc in Brittany, the ‘briochains’, claim to have invented it, though they appear to have convinced only other Bretons. Another theory ascribes this butter bread to Brie; that region is famous for its cheese, not butter, but proponents of this theory claim that Brie cheese used to be one of the ingredients in brioche. Most likely, brioche comes from the old Norman word ‘brier’, which describes the kneading techniqu
