One day when Charles IX was out hunting in Sologne, it is said, he was captured by some brigands. At dinner he was regaled with such a splendid example of the local speciality of game pâté that, when returned to freedom, he granted its creator the title of ‘pâtissier du roi’. This feuilleté can be made with any game by substituting the same weight of meat for the birds used here.
