In the good old days the river Allier was famous for its salmon. In this recipe slices of the fish are layered with a filling of puréed salmon and wild mushrooms in a puff pastry case. A herb and butter sauce can be served as accompaniment. Pie pastry is an alternative to puff pastry, and other wild or cultivated mushrooms may be substituted for the cèpes.
