Method

Replace the cèpes with fresh or dried morels. Prepare the mushrooms*; rinse them thoroughly to get rid of any sand and cut off the ends of the stalks. Put the morels in a heavy pot, cover and cook for 2-3 minutes over a medium fire. Drain and discard the liquid. Continue c
