Beetroot/beet has always been popular in the North of France, and at one time a wine was made from it there.

Method

Make the vinaigrette* and set aside.

Wipe the chicory/endive, discard any wilted leaves and trim the stems. Cut each head of chicory into 2 cm/¾ in diagonal slices. Wash the lamb’s lettuce very tho
