Marc adds character to the champenois version of this popular salad. Any robust greens such as endive/chicory or escarole can be used instead of dandelions.

300 g dandelion greens

Method

Thoroughly wash the greens, drain and dry on paper towels. Put the potatoes in cold salted water, bring to a boil and simmer for 15-20 minutes or until almost tender; they should be slightly undercooked.

Meanwhile, if the bacon is salty, blanch* it. Set a pottery bowl in a water bath and heat until hot but not scalding to the touch. When the potatoes are cooked, drain them, peel and sli
