Some think this puff pastry was created in Artois; others that it was made up by a vaudeville artist named Dartois, who was born in Artois in 1788. In any case, the earliest mention of puff pastry, ‘gâteau feuilleté’, comes from the North in a charter granted by Bishop Robert of Amiens in 1311.

1 egg white, beaten until frothy

Method

Make the puff pastry* and chill for 1 hour or until firm. Make the pastry cream*, let it cool, and flavour it with rum.
