The arrival of Jerusalem, or root, artichokes in France from the New World coincided with the visit of Indians of the Brazilian Tupinamba tribe to the court of Louis XIV. The vegetable is now a good deal more popular around Lyon than in its native USA.

Ingredients

750 g Jerusalem artichokes

Method

Peel the artichokes and cut each into 2 to 3 equal pieces. Put them in a pot with cold water to cover, add salt and boil over a high fire for 5 minutes; drain thoroughly.

Heat the oil and butter in a frying pan and add
