‘Encornet’ resembles its near relation, the ‘calamar’ (flying squid). Either can be used in this dish, as can the American squid found all down the Atlantic coast to the Gulf. For ‘encornets farcis aux épinards à la provençale’, add the chopped tentacles to the spinach stuffing of ‘sardines farcies aux épinards’ and stuff the squid with this mixture.
