Toulouse sausages are very simple, made of pure pork seasoned only with salt and pepper and, on occasion, with garlic. Their character comes from the special back fat which is used, and the way the meat is coarsely chopped to give extra texture to the sausage. For ‘saucisses à Tail’, add 1-2 cloves of crushed and chopped garlic to the mixture.
