Turnip sauerkraut, a speciality of the town of Colmar, has never achieved the fame of true sauerkraut and it deserves to be better known. It can be prepared following the cabbage sauerkraut recipe, or by this quick method.

1-kg salted pork shank or uncook

Method

Prepare the turnip sauerkraut a day ahead: put a layer of turnips in an earthenware bowl, sprinkle with a little salt and a few of the juniper berries and peppercorns; press down tightly.
