Metz chocolate cake is rich, yet has an unusually light texture given by potato starch.

Set the oven at moderate (175°C/350°F). Butter the cake pan.
Put the chocolate and milk in a medium, heavy-based saucepan and heat gently, stirring constantly, until the chocolate is melted and smooth. Remove from the heat and beat in the vanilla, half the sugar and the potato starch. In a small bowl, mix the almonds with the egg yolks; then stir them into the chocolate mixture. Beat th
