Fried toasts like these can also be topped with mushrooms in a cream sauce – a good way of using stale bread.
Cut the crusts from the bread and slightly hollow the centre of each slice to form a case. Heat two-thirds of the butter in a frying pan, add the bread cases and brown them on both sides; drain on paper towels. If the bacon is salty, blanch* it.
Heat the remaining butter in a small saucepan, add the onion and cook over a low fire, stirring until soft but not brown. Stir in the bacon and
