These mutton chops should be slightly charred to contrast with the creamy onions.

Ingredients

1 kg large onions, thinly sliced

Method

Put the onions in a pot of boiling salted water and boil for 5 minutes or until softened; drain thoroughly. Melt the butter in a sauté pan, add the onions, salt and pepper and cook over medium heat, stirring often, until lightly browned.
