Put the onions in a pot of boiling salted water and boil for 5 minutes or until softened; drain thoroughly. Melt the butter in a sauté pan, add the onions, salt and pepper and cook over medium heat, stirring often, until lightly browned.
Heat the grill/broiler and cook the chops for 3–4 minutes on each side or until well browned but still pink inside; when pressed with a finger, they sh
