This soup, flavoured with the garlic and basil sauce, ‘pistou’, varies with the seasons. In summer the soup itself is based on fresh white beans and courgettes/zucchini and the pistou can be made with fresh basil. In winter, the soup has to be made with dried beans, pumpkin instead of courgette, and pistou preserved in oil. If some of the vegetables are not available, they can be omitted.
