Tomato and Anchovy Tartines with Red Onions and Basil

While anchovies, red onions, and basil are all quite strong flavors, the ingredient that really ties this tartine together is the olive oil, drizzled generously over everything at the end. We have a favorite, of course! One of our rosé wine vintners in the south of France once introduced us to a neighbor, an olive oil producer called Moulin du Haut Jasson. They make award-winning olive oil in gorgeous blue bottles that we now carry in the shop (see Resources).
