Strawberry Sorbet

Strawberries define the arrival of spring in our region. Between Lou’s strawberry patch in the garden and the juicy Gariguette varietal we buy whenever we can at our Wednesday market, our counters are covered with boxes of them more often than not in May and June. We add our hives’ springtime honey to give the sorbet a slightly floral note. Use the best berries you can find. (If you see Mara Des Bois, Charlotte, or Cléry varieties, be sure to try their unique flavors.)
