Raspberry Soufflé Omelette

Here is a dish for a romantic dinner. We served these omelettes at Claude’s several times as a fitting finale to the special monthly dinners we called Soirée de la Fine Bouche [literally meaning ‘Evening of Fine Taste’]. A meal in a restaurant should be a theatrical experience and, for the chef, there is something very exciting about the split-second timing involved in cooking 40 soufflé omelettes in as many minutes.
